The Cumulus winemaking philosophy

It is no accident that Cumulus wines are so highly regarded by wine lovers of all persuasions. Here are the prime elements of our winemaking philosophy:

  • Vineyard location is key to the styles of wine we seek to create for you — ones with varietal strength, brightness, elegance and palate structure.
  • Vineyard balance is critical; this is achieved by minimising vigour and creating balance whilst not overly stressing vines.
  • Willingness to prune and bunch thin to give the desired balance and evenness. 
  • Focus on pick the grapes with bright fruit character and full ripe varietal expression; never overripe.
  • The fruit should be the main character of all our wines, with oak, yeast and other secondary characteristics supporting and enhancing the total varietal character.
  • Set the highest goals and achieve them through adhering to strong and unrelenting standards.
