Fig, Onion Jam and Manchego Crostini

This is a simple, fresh little canape the encapsulates the colours and warmth of Christmas. You can buy the onion jam or follow the recipe below to see how simple it is. Manchego cheese is a beautiful hard cheese from Spain that it available in most Delicatessens. Can substitute with goats curd.

Serves 4


  • 1 French Baguette
  • 2 Brown Onions
  • 1 Tablespoon Balsamic Vinegar
  • 1 Tablespoon Brown Sugar
  • 15g Butter
  • 1 bunch Thyme
  • 3 Ripe Figs
  • 100g Machego Cheese


  1. Thinly slice the onions and saute in butter over a medium heat with a pinch of salt until soft and translucent. Add vinegar and sugar and cook over a low heat until dark and sticky. Add  1 teaspoon fresh picked thyme and allow to cool.
  2. Thinly slice the baguette on an angle in 1/2cm thick pieces. Lightly toast under a salamander with a touch of olive oil.
  3. Slice the figs thinly from top to bottom. Shave pieces of the of the Manchego using a peeler.
  4. To serve place a piece of the shaved Manchego on each crostini. Top with a teaspoon of onion jam, 1 slice of fig, a few thyme leaves and a few flakes of sea salt.
