Smoked trout, mint and mango salad

Serves 4-6


  • 2 ripe mangos, peeled and cut into cubes
  • 1 x Lebanese cucumber, cut into chunks
  • 1 cup mint leaves
  • 2 cups butter lettuce
  • 400g smoked salmon, flaked
  • 4 spring onions, thinly sliced
  • For the dressing
  • 4 tbsp olive oil Juice of one lemon
  • 2 tbsp dill, finely chopped


Combine all ingredients on a large platter and gently toss to combine. For the dressing; whisk together the olive oil, lemon juice and dill and drizzle over the salad.
